<div>The pie is a ubiquitous symbol of both Italian cooking and Americana. Oven-baked, thin-crust or deep-dish, round or square, it is a common favorite throughout the United States, with a wide number of regional variations.</p>
<p>The most traditional pie is the pizza Napolitano, or Neapolitan pizza. Made of strong flour, the dough is often kneaded by hand and then rolled flat and thin without a rolling pin. The pizza is cooked in an extremely hot wood-fired stone oven for only sixty to ninety seconds, and is removed when it is soft and fragrant. Common varieties of Neapolitan pizza include marinara, made with tomato, olive oil, oregano, and garlic, and marguerite, made with tomato, olive oil, fresh basil leaves, and mozzarella cheese.</p>
<p>New York was home to the first pizza parlor in the United States, opened in Little Italy in 1905 by Gennaro Lombardi. It is not surprising, then, that New York-style pizza dominates in the Northeastern part of the country. It is thin-crusted, and made with a thin layer of sauce and grated cheese. The dough is hand-tossed, making the pie large and thin. As a result, it is served cut into slices, traditionally eight, which are often eaten folded in half. It can be served with any number of toppings, including pepperoni, the most popular topping in the United States, or as a “white pizza”, which includes no tomato sauce and is made with a variety of cheeses, such as mozzarella and ricotta.</p>
<p>Chicago is also home to a major variety of pizza. The Chicago-style pizza is deep dish, meaning it is made in a pan with the crust formed up the sides, or even with two crusts and sauce between, so-called “stuffed” pizzas. The ingredients are “reversed” in a Chicago pizza, with cheese going in first, and then sauce on top. This particular form of pizza was invented in 1943 at Uno’s Pizzeria in the River North neighborhood of Chicago.</p>
<p>The Midwest also plays host to the St. Louis style pizza. This thin-crust delicacy is made using local provel cheese instead of mozzarella, and is very crispy. Heavily seasoned with oregano and other spices, with a slightly sweet sauce, it is difficult to fold because of the crust and is often cut into squares, instead of served in slices.</p>
<p>A Hawaiian pizza is an American invention that has nothing to do with Hawaii save that one of the main ingredients is pineapple. The pineapple is put atop the pizza, along with Canadian bacon, giving a rather sweet taste very different from pizzas closer to the Italian original. Hawaiian pizza is very common in the Western United States.</p>
<p>In fact, a number of esoteric pizzas are common on the West coast, and “gourmet” pizza is often referred to as “California-style” pizza. This is an example of fusion cuisine, and many of the pizzas go far beyond the common tomato sauce and cheese. Thai pizza, for example, can include bean sprouts and peanut sauce, while breakfast pizza, as the name implies, may be topped with bacon and scrambled eggs. As a “gourmet” food, California pizzas are often individual sized, serving two people at most, and are not cut in slices like other common types of pizza pie.</p>

<div>Because of my young children, I have leaned towards healthy cooking choices. In addition, my husband who always eats out due to his frequent business meetings, desperately needs to lose weight. Being a Chinese and growing up with a mum who likes to cook, I have been educated in more ways than one on the various ways to whip up a dish. The following are some helpful tips that are practiced from my own kitchen.</p>
<p>The major thing to keep in mind when cooking is what hurts the foods and takes the nutrients out of them. You can eat a complete meal and end up not having adequate nutrients in any of the foods because of how you cooked. The major types of cooking that will burn away the vitamins include frying, boiling, saute methods and microwave. It is important to consider these methods before deciding on how you will cook your food.</p>
<p>One of the better methods used in preserving the nutrients in food is steaming. Steaming will actually preserve the vitamins and minerals that are in it. Because you don&#8217;t have to add any oils or fats, it can also help you with taking away things that you don&#8217;t need. A medium sized fish takes only 10 minutes of steaming time. It can be really that fast.</p>
<p>Boiling is also another healthy cooking method. However, do not overboil vegetables as this will kill all the nutrients and enzymes in them. If you need cooked vegetables, boil the water first. In boiling water, put your vegetables in for about 3 minutes. For some taste, you can always make a sauce to pour over the boiled vegetables.</p>
<p>Another thing that you should consider when cooking is what you are putting into the foods while they are on the stove. For example, adding extra salt can lead to a change in your blood pressure over time that isn&#8217;t necessarily healthy. In relation to this, you should stay away form flavors and ingredients that have high sodium or fat as part of the recipe. Use the healthier sea salt if you really need to.</p>
<p>All of the foods that you eat should be balanced with raw fruits and vegetables. Having these on hand will help in adding to nutritious value in your diet. Adding a salad or different fruits is always important to your meals.</p>
<p>Healthy cooking does not necessarily translate to bland food. Sure the food may not be as tasty due to the less salt and the cooking method used. But there are ways to getting round them like using natural ingredients; such as, garlic, onions or herbal leaves for flavoring. Take the steam fish for example.</p>

Check expiration dates on all non perishable supplies, so that running to the store happens in the middle of baking. Preheat the oven and check with an oven thermometer. Most ovens can run anywhere from twenty five degrees to cooler to twenty five degrees warmer. This ensures that the proper temperature is obtained for the recipe. Follow directions on adjusting oven racks, prepping baking sheets, and using the right baking pan. Measure ingredients accurately this means holding it up to eye level especially with liquids. To measure dry ingredients over fill then level off with flat edge of knife. Finally bake with love, if an individual is angry or rushed the recipe may not turn out right.</p>
<p>These next cooking tips are about ingredients. There are many different kinds of flour, and they are not all the same. Wheat flour is important for all yeast breads. Bleached and unbleached flours can be used interchangeably. Make sure to store flour in an airtight container, in a spot that cool and dry for up to six months.</p>
<p>Baking powder and baking soda are not interchangeable. Baking powder is a combination of baking soda and an acid. Its leavening power works when mixed with wet ingredients and then baked into the oven. Baking soda is sodium bicarbonate. When it mixes with an acid ingredient like buttermilk, yogurt or molasses, it makes carbon dioxide bubbles that make baked goods light and airy.</p>
<p>Cooking tips for handling chocolate are important. First there are different types of chocolate. Unsweetened chocolate is chocolate liquor that has at least fifty percent cocoa butter and no added sugar. Various amounts of sugar added create bittersweet, semisweet, and dark chocolate. Milk chocolate is dried milk powder, cocoa butter and added sugar. White chocolate is made with cocoa butter instead of chocolate liquor. Unsweetened cocoa is made from chocolate liquor with seventy five percent cocoa butter removed and then dried and ground into a paste. <div>For decades, broiled chicken has been the meat of choice for those on low-fat and low calorie diets. Unfortunately, broiled white chicken has also acquired a reputation for being bland, rubbery and dry.</p>
<p>That&#8217;s a real shame, because chicken - especially white meat chicken - is one of the most versatile proteins available. All it takes is a bit of knowledge about how to broil (or grill) chicken so that it stays moist and flavorful and you will find that chicken tastes great even without all the sauces and gravies.</p>
<p>How to Broil Chicken That Melts in Your Mouth</p>
<p>One of the most important things to keep in mind about chicken white meat is that it has little fat of its own. The fat is all in the skin. While that makes it relatively easy to cook chicken with almost no fat, it also means that chicken white meat is prone to becoming very dry when cooked without the skin. Want to avoid dried out broiled chicken *******? Here are some tips for broiling chicken that will be moist and delicious.</p>
<p>1. If fat is not a concern, broil ******* with the skin on, and turned toward the heat source. For broiling, start with the skin side down, and then flip chicken pieces halfway through. Broiling ******* with the skin on will not appreciably increase the fat content of the meat as long as you remove the skin before eating it.</p>
<p>2. If using skinless breasts, rub them lightly with olive oil or marinade before broiling. Experiment with flavored olive oils to find flavor combinations that you like. Or, brush ******* with Italian dressing - or spray lightly with cooking spray to give them a light coating.</p>
<p>3. Precook chicken ******* in chicken stock before putting them under the broiler. They will start out infused with extra moisture and flavor, and spend less time drying out under the broiler.</p>
<p>4. Use an herb rub to crust the chicken on the outside. You will a get browned, crusted outside and moist, tender inside.</p>
<p>5. Your heat source should be about 5 to 6 inches away from the top of the chicken for best broiling.</p>
<p>6. Flavor chicken meat with herbs, salt and spices before broiling.</p>
<p>7. Preheat the broiler for 9 to 10 minutes before putting the meat in. If you try to broil chicken in a broiler that is not preheated, they will dry out before they cook through.</p>
<p>8. Keep your eye on the chicken while it is cooking. If edges are cooking too quickly, rearrange the pieces on the pan or adjust the heat.</p>
<p>9. Conversely, shield the thinner edges of chicken ****** with foil to prevent them burning before the rest of the chicken is cooked.</p>
<p>10. Flip chicken when top side is browned. Since ******* will not all cook at the same rate, keep an eye on the chicken so that you can remove ******* when they are done and prevent them from drying out.</p>
<p>11. Use tongs to turn chicken. Do not pierce with a fork or juices will escape, leaving chicken dry and stringy.</p>
<p>12. Brush top side of chicken with marinade, barbecue sauce, Italian dressing or flavored olive oil after turning. A light basting will refresh the moisture and infuse flavors into the meat.</p>
<p>Broiling a Whole Chicken</p>
<p>Generally, whole chicken is roasted, often after being stuffed with forcemeat of some kind or other. However, a whole chicken can be cooked under the broiler for a very different taste. You just need to flatten the chicken before cooking. Follow these directions for flavorful broiled whole chicken.</p>
<p>1. First, butterfly the chicken</p>
<p>2. Remove the backbone: Using a heavy knife or kitchen shears, cut close to the backbone from neck to tail on each side of the bone, and then remove it.</p>
<p>3. Flatten the chicken: Spread the chicken skin side up on your table or counter, and bang the ****** with your fist to break the collar bone and some of the ribs.</p>
<p>4. Fold the wings to either side of the shoulders.</p>
<p>5. Cut a slit in the skin at either side of the ****** tip.</p>
<p>6. Insert the tips of the drumsticks through the slits in the skin.</p>
<p>7. Brush the chicken with olive oil and spices. Or use flavored olive oil.</p>
<p>8. Put chicken skin side down in broiler pan - not on a rack.</p>
<p>9. Broil about 5 inches from the heat for five minutes.</p>
<p>10. Brush the chicken with oil and spices and place back under the broiler.</p>
<p>11. After five minutes baste again, using the juices in the pan, and place back under broiler for five minutes more.</p>
<p>12. Baste chicken, and then sprinkle with salt, pepper and spices and turn skin side up.</p>
<p>13. Broil and baste skin side for fifteen minutes more, basting every five minutes to ensure meat remains moist.</p>
<p>14. Chicken is done when juices run clear yellow from pricked drumstick.</p>

<p>To cut calories when making stir-frys and stews that contain both vegetables and meat reduce the amount of meat by 1/3 and increase the amount of vegetables by 1/3.</p>
<p>•	USE THE RIGHT EQUIPMENT</p>
<p>Eating healthy doesn’t have to taste bland or bad. Using the right equipment can make a world of difference in the healthy dishes you prepare. For example, using a simple grill pan provides you with a lot of flexibility in your meals. You can grill everything from fruits and vegetables to meats, while the fat just drips away.</p>
<p>•	CUTTING FAT FROM A BROWNIE RECIPE</p>
<p>To cut fat from a brownie recipe, you may cut the butter back from 8 TBSP. to 3 TBSP. and add 5 TBSP. of fat-free sour cream to the batter to make up the difference.</p>
<p>•	CUTTING OIL FROM A CAKE MIX RECIPE</p>
<p>When making up a cake from a cake mix, do not add the ½ cup of oil the recipe calls for. Instead add ½ cup of unsweetened applesauce to the batter for a moist healthier cake.</p>
<p>•	USE EGG BEATERS</p>
<p>Substitute Egg Beaters for half of the eggs in mostly egg dishes (use 1/4 cup of Egg Beaters substitute per egg).</p>
<p>•	IT’S O.K. TO USE LESS</p>
<p>Use less oil or butter for frying than the recipe calls for. Using about a tsp. of olive or canola oil can usually suffice. Using olive or canola oil instead of fat, butter or shortening for most recipes is a healthier choice.</p>
<p>•	USE RUBS OR MARINADES - GRILL FOODS TO ADD FLAVOUR.</p>
<p>1. Rubs are dry spice blends and usually include both salt and sugar. They are rubbed directly on and into the meat before cooking. They add a mild flavour, but if you add the rub a day or so in advance the flavour of the spices will penetrate more into the meat.</p>
<p>2. Marinades are liquid and can be made from a variety of ingredients, but most importantly include something acidic (like lemon or lime juice, vinegar, yoghurt or fruit like papayas, pineapple or kiwis). This adds enzymes to the meat which tenderize it. Use caution in the amount of time you marinade meat to avoid the meat becoming “mushy”. A general rule is, for seafood as little as 15 minutes, 4-6 hours for thin cuts of meat and up to 12 hours for larger cuts.</p>
<p>3. Use a re-sealable plastic bag to marinate meats. Add the marinade and meat into the bag, seal, and shake or mush together to combine. Then let sit in the fridge for the required amount of time.</p>
<p>4. Never re-use marinades. If you wish to make a sauce or gravy from the marinade the meat has been in, boil the marinade for at least two minutes.</p>
<p>5. Brush the extra marinade onto the meat before grilling for extra flavour. Use it like a barbeque sauce, but be sure to let it cook through</p>
